  1. Well you have taught me something here. I did not know eggplant was a fruit. In the U.K we know it as an aubergine. I find it odd that we have a completely different name for the same thing. Do you know why we do?
    I will certainly be using more of them from know on. I think they are great in all of my veggie recipes.

  2. Ok, I definitely didn’t know eggplant was one of those non-veggie veggies! It’s a fruit! Ha! I think tomatoes also fall into the nightshade category and are also consider fruits.

    My husband grows a ton of eggplant in our garden every year, but I really need some recipes to spice things up. I always make the same eggplant recipes: Parmesan or just breaded and fried and that gets kind of boring.

    After seeing all the benefits of this magical fruit, I think I need to find more ways to incorporate this into my diet.
