In my last article, we looked at fruit peel health benefits. In this article, however, we will be discussing vegetable peel health benefits and how they can bring natural healing to our bodies

As it is with fruit peels so it is with vegetable peels, in fact, vegetable peels are thrown out more often than fruit peels but do you know that vegetable peels are loaded with

nutrients and vitamins that can do our bodies a lot of good. Do you remember how it was when we were kids and got that serving of vegetables what our parents would often say to us, “eat your veggies” and for some of us this was a nightmare that we wanted to awaken from but sad to say it was not a dream but a reality we were faced with and that was eating our vegetables?

What’s also surprising is, there are many adults who are just like that, They hate veggies and refuse to eat them but what they do not realize is they are missing out on foods that cannot only promote their health but also bring natural healing.

I am pretty sure if not all of us, most of us have removed and thrown the skins or peels of vegetables away, but what I found out is that a lot of the nutrients and vitamins is found in the veggie peels which is great and is something we all should get excited about.

1. I love cucumbers and eat them whenever I can. In fact, there is a salad that is made in our home that we call the cucumber salad where a lot of vegetables is added, this salad makes a great side order.

Our fourth son loves this salad so much that it seems at times that he makes and consumes it more than everyone else at home. What is so good is this type of salad is a great way to get your kids to eat their veggies.

thrown away because it is viewed as tasteless and useless but studies have shown that the peels of potatoes are filled with vitamins and nutrients which can benefit our bodies in many ways such as.

7. Carrot is included in so many dishes that it is mind-blowing. This veggie is known for its many benefits including promoting eye health. Too often the peel of carrots is removed then hit the trash.

But what I found out is even the peel offers benefits that can do a lot for our bodies. Carrots can be eaten raw just as is, in salads or cooked in soups and many other dishes but what does the peel has to offer. Let’s take a closer look and discuss it.

A.  When juicing your carrots it’s also good to juice the peel to get those added nutrients. A diet of carrots has been known to improve eye health.

B. Consuming carrots can promote heart health, also carrots are loaded with antioxidants that will remove free radicals from our bodies.

C. Thoroughly washing carrots with running water and a brush, cutting in chucks and semi-boiling makes a great healthy side order. Carrots have also been known to improve oral and skin health.

D. Semi-cook carrots in a stew with the peel do not only taste great but the nutrient content is high. Carrots have been known to promote healthy hair.

E. Eating carrots in a soup diced and semi-cooked is really tasty and nutritious. A diet of carrots has been known to fight cancers.

Note: Before cooking veggies wash thoroughly under warm or room temperature running water. Use a toothbrush if possible to gently scrub potatoes, carrots, squash, etc…

    David(DygieReds) here! I had no idea that vegetable peels were so nutritious. I especially took note of the cucumber peels making it easier to go to the bathroom.
    I used to wonder why people roast potatoes in the peel and still only eat the inside. Now I’m going to tell them why they should eat the peel too.

  2. Wow, I never knew that vegetable peel can be reused for consumption purposes. I always considered them as frills and didn’t think much about the nutritional benefits until now.

  3. Apart from carrots I tend to leave all our peels on. However now after reading your thoughts on the carrots I may as well give them an extra scrub and throw them in peel and all! It’s so hard to get the kids to eat their veggies, but when they do the skins will always be on from now on, to ensure they get as much nutrients as possible into them.

    Great post! This is a lot of really good information. I hardly ever peel my vegetables and fruits. I new the peelings offered a lot of vitamins, but I didn’t know about all of their benefits.

    I love cucumbers! I’m not sure how good it is for me, but I make a killer cucumber and onion salad during cucumber season and Bread & Butter pickles. I grow my own cucumbers. I even put them in my water everyday this time of year.
    Do you know if I’m still benefiting from the cucumber peeling when it’s in my water? I’m not actually eating it in this instance, just drinking the juices from it.
