In this article, we will be looking at how to grill fish and not just grill fish but grill fish the Caribbean way. Now there are many ways in which fish can be prepared or grilled but what I want to share with you is how we grill here on the island.
I never ate grilled fish up until a few years ago when my church had a function for the men’s fellowship. As we came together to eat, fellowship, and talk about men’s stuff.
I can still remember that night, it was a beautiful Friday night the weather was calm and the fellowship was just so wonderful.
Party Crashers
Interestingly enough some of the ladies came after a while, I guess they could not resist the thought of not being able to taste some of that fine food, talk about party crashers. Anyway on to how to grill fish the Caribbean way
How to grill fish
I watch as those brothers worked their stuff and to tell you the truth it was pretty amazing and pretty simple to make. Here in the Bahamas some of the fish that is found in Bahamian waters and that really is delicious are Snappers, the Nassau Grouper, Margaret Fish, Grants, Jackfish, etc… These are just a few that the islanders enjoy. That night we grilled Snappers.
How to prepare?
What you will need is lime or lemons according to the number of fish you are planning to grill, celery, sweet or bell pepper, onion, hot pepper, salt, black pepper (carrots and plantain are optional) but adding these is good also, butter (thyme or rosemary is also optional) but these will work wonders and will really have your mouth watering.
Let the fun begin
Make sure the fish is clean, season fish with a sprinkle of black pepper and salt on both sides, at this time if you prefer you can use a small hot pepper, crush and spread on both sides of fish next tear a piece of foil that is large enough to cover fish
then cut up your herbs, the onion, celery, and bell pepper next spread foil out and with a tablespoon of butter spread on the foil, then what you will do next is place herbs on the foil and lay fish on top of the herbs, if you prefer you can add either a few leaves of thyme or rosemary on top of your fish. Cut the lime in half and squeeze over the fish then close fish in the foil wrap and place on the grill.
Allow fish to cook for 10-2o minutes some fish may take a shorter or longer time, depending on the size of the fish and the thickness. Be very careful not to burn your hand as you remove the fish from the grill. Open foil and season with pepper and salt if it needs more seasoning. There you have it a juicy mouth-watering grill fish.
As you sit back and eat try not to bite your fingers off because grill fish is really delicious and will have you wanting more.

Hello Norman, I believe I already follow you on several sites. Really great post. Since I am from Jamaica and go back regularly, this method of grilling fish is almost the same. We use the grill on stones over the embers. Like you said it really is bite your fingers off once you start to eat. Man my mouth is starting to water. Thanks for this. Memories of eating fish under a canopy of stars and hearing the Caribbean Sea.
Very good article I like grilled fish everything sounds amazing, I do have one question I cannot eat hot spicy food, does the hot pepper make it hot and spicy are is it just a little boost to the taste? Thanks for sharing this.

Hello, Randy so good to hear from you. Grill fish is very healthy and once prepared the right way is really great. Adding hot pepper really gives it a spicy great flavor. If you can’t eat spicy that’s fine as long as you are eating healthy.

Interesting. I’m not a huge fish fan but my husband and dad have fish about 2 times a month together. I’m sure they would find this recipe useful. I’ll definitely show them this. Hello my friend so good to hear form you and thanks for commenting. Grilling is a great way to eat healthy and I can see that cooking in this way is not new to you. Snapper is a Bahamian fish that most of the islander love. There are different type of snappers that is found in Bahamian waters.

I like fish but struggle eating it….I choked really bad on a bone when I was young and the thought has stayed with me throughout adulthood. No way could I eat fish with the head on it…those beady little eyes looking up at me while I dissect it I never could do…I know mind over matter…right? This recipe sounds amazing though, I will have to try it, as long as someone cuts the head off ..LOL

I am a great lover of any meal involving fish and cooking fish on an open charcoal grill sounds really great .I like the way that you have incorporated the recipe ingredients and some of the tools needed,as i am sure that this method of cooking fish will go down well in the BBQ season.
